Hey everyone! Happy Easter! How are you all doing today? I hope you all are doing great because guess what? I got something for you again.....another new recipe to add to the Cafe! Yep, yep, yep! This recipe is basically like the nachos I made a year ago but this time it has shrimp in it! Since I'm a flexitarian, I am trying to eat more meatless and seafood dishes, but I would only eat meat occasionally - This is why the Shrimp Nachos was born so there can be a continuation of this lifestyle and share it with you all who are interested in this type of recipe! Therefore, in today's recipe, we are going to make Shrimp Nachos! Check it out!
Serving Size: I wanna say about 6-8 people. If you're making it for more than that, double up the recipe and use another bowl!
Cooking Time: 15-20 minutes (It really depends on how long you chop the ingredients so it could be longer)
1 Bag of Salad size Shrimp
1 Pouch of Taco Seasoning Mix (I used Old El Paso)
1 Bunch of Green Onions (I used only 2 strips)
1 Red Bell Pepper
1 Green Bell Pepper
2 Roma Tomatoes
1 Can of Black Beans
1 Pack of Shredded Mexican Blend Cheese
1 8 ox Box of Velveeta Cheese
1 Bag of Party Size Doritos (I used Nacho Cheese flavor, my fav HELLOOOOOO!!)
1/2 Cup of Water
Seasonings:
Black Pepper
Salt
Garlic Herb & Black Pepper
Garlic Herb & Onion
Seafood Grill Rub
Optional: 1 15 oz bowl of Guacamole
Cookware:
1 Medium Skillet
1 Small Pot
2 Large Bowls (I made more than intended lol)
1 Can Opener
1 Microwave
1 Knife
Instructions:
1) Pour your shrimp into the skillet and let it cook for 5-10 minutes. Sprinkle some black pepper, salt, garlic herb & black pepper, garlic herb & onion, and seafood grill rub into the skillet.
2) While they are cooking, pour the taco seasoning and 1/2 cup of water into the skillet. Stir occasionally.
3) Use the can opener and open the black beans. Pour the black beans into the pot and let it cook for 5 minutes or until it boils.
4) Chop the green onions, green & red peppers, and tomatoes.
5) Cut the velveeta into small squares or rectangles.
5) Divide the doritos into the 2 large bowls and divide the shrimp into the 2 large bowls as well.
6) (At this point, you can pretty much decorate the recipe to your liking as long as you make sure you place the velveeta and shredded cheese on top) - I placed the black beans first, then poured the shrimp, the chopped peppers, green onions, tomatoes, shredded cheese, and the velveeta. Optional: you can place the guacamole into the bowls as well or you can just eat it separately like I did.
7) Place one of the bowls into the microwave for 5 1/2 minutes, do the same for the other bowl. NOTE: the chips might be a little soggy!
8) Enjoy!
